The DeBruce’s culinary ethos draws inspiration from three core pillars - the local heritage of the area, the bountiful products grown and crafted from its neighbors, and the rich and bountiful mountain under whose shadow The DeBruce is nestled. These pillars, and an unwavering commitment to culinary excellence has resulted in an unexpected and ambitious restaurant that sits at the heart of this small and quaint hotel here in the valley of the Willowemoc.

The restaurant and its kitchen are at the fulcrum of The DeBruce.  We think not just about each meal but how they connect and form a lasting memory. The Tasting Menu is an immersive dining experience where each courses of the progression helps to tell the story of our home and of our heritage. Staying with us allows our guests to experience the culinary journey in its fullest, with preferential reservations for the tasting menu in our jewel-box dining room.

    The Tasting Menu is an immersive dining experience that changes with the seasons. Through our progression, we tell the story of our home and heritage. All dietary restrictions and preferences are welcomed. Staying with us and choosing the dining package allows our guests to experience the culinary journey in its fullest.     À La Carte Menu

    Sit down for dinner in our jewel box dining room looking out at the valley that helps inspire it all. The à la Carte is our answer for a casual evening at your leisure.

    While our à la Carte Menu is available daily when open, please note that Saturdays are dedicated primarily to Tasting Menu reservations from 6:30 pm onwards. Check Resy to see availability for each menu directly online.

    Breakfast | Brunch

    Start your day off with breakfast before your daily adventures begin. Available every day for in-house guests. Brunch is available for both in-house guests and outside guests on weekends.

    The Chef

    Eric Leveillee is the Culinary Director at The DeBruce, where he oversees the culinary program for the award-winning restaurant.

    Chef Eric’s menus reflect the marriage of his personal journey, connection to nature and the story of the land and history of the Catskills. “It only took one visit to The DeBruce to understand that this is a truly special place,” says Chef Eric. “I felt an immediate connection to not only the region, but the mission of the Foster Supply team. I’m honored to be a part of a team that has so much respect and appreciation for the environment and a drive to showcase it to guests through a thoughtful, one-of-a-kind dining experience.”

    Beverage Program

    Grab a cocktail in our Club Room tucked away beneath the lodge, meant to be a cozy, inviting haven for locals and guests alike. With walls clad with reclaimed flooring from another local hotel that did not survive and the glow of another river stone fireplace, it is a warm destination to gather friends and tell the day’s tale. Uncomplicated drinks made with care and are accompanied by fish tales, table top shuffleboard, and good food.
