The Food

During a stay at The DeBruce the restaurant and its kitchen will undoubtedly be the fulcrum of your stay.  You've come here to eat and you can anticipate an explorative experience.  We think about meals not just singularly but rather how they can connect and form a cumulative story over an entire stay.  We have three guides as we develop our menus.  The Mountain and Valley where we gather product from our own lands and buy from our farming neighbors.  The Heritage of our area which roots us in our past while allowing us to develop its future.  And the Care and Comfort of our guests who are the most important ingredient for us.  


The Chef

Executive Chef Aksel Theilkuhl is the inspirer and executer of the culinary program at The DeBruce.  Having spent much of his career under the tutelage of Chef Laurent Tourondel, Theilkuhl has found a cook's dream land in the Catskills.  Direct access to people who grow their own product provides a constant source of creativity.  Access to a private mountain outside his kitchen door from which to gather ingredients motivates Aksel on a daily basis.

The Food

For in house guests, Breakfast and Dinner are included.  Breakfast is a full a la carte menu and dinner is always a multiple course menu with one of the nightly dinners being a 9 course tasting menu. 

Outside guests are welcome with reservations required for the Dining Room and open seating with no reservations needed for the Club Room. 


The Dining Room

Our glass walled dining room is a 28 seat floating jewel box complete with a wood burning Franklin stove and perched on the corner of the building overlooking the mountains and valley below.  In summer the glass walls open and transform the dining room into a suspended open-air experience during dining.  The floors are native blue stone, the walls are clad in salvaged Butternut and the table tops are Hemlock, all materials with heritage and significance to our valley.

Our Dining Room is open daily offering a multiple course tasting menu*. Our seasonal movements inspiring each menu can be found above and our 9 course tasting menu is priced at $125 per person. Outside guests are always welcome with a reservation, required at least 48 hours in advance.  

While we are regularly able to accommodate vegetarian menus and most food allergies including shellfish, nuts, and gluten, we are challenged with vegan menus and dairy allergies.  Please contact us with any questions.

Sundays - Thursdays: 6:15pm or 7:00pm seating, varies based on availability
Fridays: 6:00pm - 9:00pm (*4 course menu available on Fridays only. Contact our team for more information.) Saturdays: Two seatings available at 6:15pm & 9:00pm

Closed on Tuesdays beginning September 3, 2019 through March 31, 2020


The Club Room 

Located in a walkout basement with its own private entrance, the Club Room offers an informal setting with its roaring fieldstone fireplace, intimate seating and bar to gather around after sunset or on a snowy winter’s afternoon. Salvaged flooring from local fallen hotels lines the walls and helps keep the spirit of this area's hospitality alive.  The Club Room menu is inspired by Chef Aksel’s French culinary roots.  Laughter and general merriment are encouraged.

Our Club Room is open daily.  Dinner is available each night, lunch available on Saturdays and brunch is served on Sundays. No reservations needed.

Mondays - Thursdays: 5:30pm - 9:00pm  
Fridays: 5:30pm - 10:30pm  
Saturdays: 11am - 2:30pm for lunch; 5:30pm - 10:30pm    
Sundays: 11am - 2:30pm for brunch; 5:30pm - 9:00pm
